Finish with zest: Remove lamb from skillet. Add remaining 1 tbsp olive oil, then stir in remaining 1 tbsp minced garlic and 1 tbsp lemon zest. Cook for 1 minute. Return lamb to skillet, drizzle with remaining 1 tbsp lemon juice, and cook for 2 more minutes.
